1. Recipe for Crema de Apio (Classic Venezuelan Style)

This Venezuelan dish is a rich and hearty soup often served as an appetizer or light dinner.

Ingredients
  

  • 500 g Apio Venezolano Arracacha or substitute with Parsnip or Celeriac if unavailable
  • 4ΒΌ cups Chicken Broth
  • 2 tbsp Butter optional
  • 1/4 Onion optional, for extra flavor
  • Fresh herbs: Cilantro Basil, or Leeks (optional)
  • Cream Cheese or Queso Blanco optional for garnish
  • Salt to taste

Instructions
 

  • Peel the Apio, ensuring all tough skin is removed.
  • Cook the Apio in chicken broth over high heat for 25 minutes until soft.
  • Blend the cooked Apio with some broth to achieve the desired creamy consistency.
  • Reheat the mixture and season with salt. Garnish with Queso Blanco, Cream Cheese, or toasted bread.
