2. Buttered Spinach with Minced Eggs

A traditional recipe that celebrates simplicity and nostalgia.

Ingredients
  

  • 1 ¼ pounds spinach trimmed
  • 1 tbsp salted butter
  • ½ tsp fine sea salt
  • ¼ tsp white pepper
  • 2 hard-boiled eggs minced

Instructions
 

  • Cook the Spinach: Simmer spinach in a covered pot over medium-low heat for 15–20 minutes until tender.
  • Drain and Press: Remove excess water by pressing spinach in a colander.
  • Finish with Butter: Melt butter in the pot, add spinach, and season with salt and white pepper. Stir in minced eggs before serving.
