2. Buttered Spinach with Minced Eggs
A traditional recipe that celebrates simplicity and nostalgia.
- 1 ¼ pounds spinach trimmed
- 1 tbsp salted butter
- ½ tsp fine sea salt
- ¼ tsp white pepper
- 2 hard-boiled eggs minced
Cook the Spinach: Simmer spinach in a covered pot over medium-low heat for 15–20 minutes until tender.
Drain and Press: Remove excess water by pressing spinach in a colander.
Finish with Butter: Melt butter in the pot, add spinach, and season with salt and white pepper. Stir in minced eggs before serving.
