3. Authentic Mexican Touch

For a truly traditional experience, some families in northern Mexico and south Texas season their rice with the "Texas Mexican trinity" of garlic, black pepper, and cumin. This flavor profile reflects generations of home cooking traditions.

Ingredients
  

  • 1 cup long-grain rice
  • 1 tbsp canola oil
  • 2 cups water
  • 1/2 tsp cumin
  • 1/4 tsp black peppercorns
  • 1/2 tsp salt
  • 1 garlic clove
  • 1 small tomato diced

Instructions
 

  • In a mortar and pestle, grind cumin, black pepper, salt, and garlic into a paste.
  • Sauté the rice in oil until golden. Add the spice paste, water, and diced tomato.
  • Cover and cook over low heat until tender and fluffy.
