3. Lemon Chicken with Herby Garlic Sauce
For those who prefer bright and zesty flavors, Ina’s Lemon Chicken is a winner. The marinade works equally well with boneless, skinless chicken thighs.
- 1/4 cup olive oil
- 3 tablespoons minced garlic
- 1/3 cup dry white wine
- Zest and juice of 2 lemons
- 1 1/2 teaspoons dried oregano
- 1 teaspoon fresh thyme leaves
- Salt and pepper to taste
- 4 boneless skinless chicken thighs
- Lemon slices for garnish
Warm olive oil and garlic in a small pan until fragrant. Remove from heat and stir in wine, lemon zest, lemon juice, oregano, and thyme.
Pour half of the sauce into a baking dish. Add chicken thighs and top with lemon slices. Pour the remaining sauce over the chicken.
Marinate for 1 hour or up to overnight.
Preheat the oven to 400°F. Bake the chicken for 25-30 minutes until cooked through.
Serve with roasted vegetables or a simple salad.
