3. Lemon Chicken with Herby Garlic Sauce

For those who prefer bright and zesty flavors, Ina’s Lemon Chicken is a winner. The marinade works equally well with boneless, skinless chicken thighs.

Ingredients
  

  • 1/4 cup olive oil
  • 3 tablespoons minced garlic
  • 1/3 cup dry white wine
  • Zest and juice of 2 lemons
  • 1 1/2 teaspoons dried oregano
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • 4 boneless skinless chicken thighs
  • Lemon slices for garnish

Instructions
 

  • Warm olive oil and garlic in a small pan until fragrant. Remove from heat and stir in wine, lemon zest, lemon juice, oregano, and thyme.
  • Pour half of the sauce into a baking dish. Add chicken thighs and top with lemon slices. Pour the remaining sauce over the chicken.
  • Marinate for 1 hour or up to overnight.
  • Preheat the oven to 400°F. Bake the chicken for 25-30 minutes until cooked through.
  • Serve with roasted vegetables or a simple salad.
