Apricot Omelette Recipe

To create a flavorful apricot omelet, you’ll need the following ingredients (serves 1):

Ingredients
  

  • 2 medium eggs
  • Salt and pepper to taste
  • Triple crème Brie cheese thin slices
  • 2 slices of ham Black Forest or similar, thinly sliced
  • 1 –2 tablespoons apricot preserves
  • Olive oil

Instructions
 

Prepare the Ingredients:

  • Crack the eggs into a bowl, add a dash of almond milk (optional), and season with salt and pepper. Whisk until fluffy.
  • Slice the Brie cheese into thin pieces, approximately 1/8 inch thick.
  • Fry the ham in a skillet over medium heat until lightly browned, then set aside.

Heat the Skillet:

  • Wipe the skillet with a paper towel soaked in olive oil to ensure an even, non-stick surface. Heat the skillet over medium heat.

Cook the Omelet Base:

  • Pour the whisked eggs into the heated skillet. As the eggs begin to set, layer the Brie cheese, followed by the ham and a thin spread of apricot preserves.

Fold and Finish:

  • Before the eggs are fully cooked, gently fold the omelet in half to seal the filling. Allow it to cook just long enough for the cheese to melt, ensuring the omelet remains tender.

Serve:

  • Transfer the omelet to a plate and garnish with fresh fruit, such as strawberries, or a sprinkle of powdered sugar for an added touch of sweetness.
