Beluga Lentil Toast Points with Garlic-Chive Goat Cheese

Ingredients
  

  • 1/4 cup beluga lentils
  • 2 cups boiling salted water
  • 1 tsp olive oil
  • 4 oz goat cheese
  • 1/4 cup chopped chives
  • 1 tbsp milk
  • 1 large garlic clove, minced
  • 5 slices whole-grain bread

Instructions
 

  • Toast Preparation: Preheat the oven to 400°F. Remove crusts from bread slices, cut diagonally into triangles, and toast them with olive oil, salt, and pepper until golden brown.
  • Lentils: Simmer lentils in salted water for 15 minutes, then toss with olive oil and red wine vinegar.
  • Goat Cheese Spread: Mix goat cheese, milk, garlic, and chives into a smooth spread.
  • Assembly: Spread goat cheese on toast points, top with lentils, and garnish with chives.
