Blackened Salmon Stuffed with Spinach and Parmesan Cheese

Ingredients

salmon fillets
skinless, about 6 oz each
2
cups
fresh spinach
1/2
cup
cream cheese
softened
1/3
cup
grated Parmesan cheese
2
garlic cloves
minced
Seasoning Blend:
1
teaspoon
paprika
1/2
teaspoon
garlic powder
1/2
teaspoon
onion powder
1/2
teaspoon
black pepper
Salt to taste
For Cooking:
1
tablespoon
olive oil
Lemon wedges for serving
Instructions
Preheat the Oven: Set your oven to 375°F (190°C).
Prepare the Filling:
Heat 1 tablespoon olive oil in a pan over medium heat.
Add minced garlic and spinach, cooking until the spinach wilts.
Remove the mixture from heat and stir in cream cheese and Parmesan cheese until well combined. Set aside.
Prepare the Salmon:
Slice each salmon fillet horizontally to create a pocket, being careful not to cut all the way through.
Stuff the salmon pockets with the spinach and cheese mixture.
Season the Salmon:
In a small bowl, mix paprika, garlic powder, onion powder, black pepper, and salt.
Rub this seasoning blend over the tops of the salmon fillets.
Cook the Salmon:
Heat a skillet over medium-high heat. Sear the salmon fillets for 2-3 minutes on each side until the tops are blackened and crispy.
Transfer the salmon to the oven and bake for 10-12 minutes, or until cooked through.
Serve: Plate the salmon and garnish with lemon wedges for a zesty finish.
