Blackened Salmon Stuffed with Spinach and Parmesan Cheese

Ingredients
  

  • 4 salmon fillets skinless, about 6 oz each
  • 2 cups fresh spinach
  • 1/2 cup cream cheese softened
  • 1/3 cup grated Parmesan cheese
  • 2 garlic cloves minced

Seasoning Blend:

  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • Salt to taste

For Cooking:

  • 1 tablespoon olive oil
  • Lemon wedges for serving

Instructions
 

  • Preheat the Oven: Set your oven to 375°F (190°C).

Prepare the Filling:

  • Heat 1 tablespoon olive oil in a pan over medium heat.
  • Add minced garlic and spinach, cooking until the spinach wilts.
  • Remove the mixture from heat and stir in cream cheese and Parmesan cheese until well combined. Set aside.

Prepare the Salmon:

  • Slice each salmon fillet horizontally to create a pocket, being careful not to cut all the way through.
  • Stuff the salmon pockets with the spinach and cheese mixture.

Season the Salmon:

  • In a small bowl, mix paprika, garlic powder, onion powder, black pepper, and salt.
  • Rub this seasoning blend over the tops of the salmon fillets.

Cook the Salmon:

  • Heat a skillet over medium-high heat. Sear the salmon fillets for 2-3 minutes on each side until the tops are blackened and crispy.
  • Transfer the salmon to the oven and bake for 10-12 minutes, or until cooked through.
  • Serve: Plate the salmon and garnish with lemon wedges for a zesty finish.
