Cinnamon Roll Honeybun Cheesecake Recipe

Ingredients
  

For the Crust:

  • 2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 1/2 cup melted butter
  • 1 tsp cinnamon

For the Filling:

  • 24 oz cream cheese softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/4 cup sour cream
  • 1/4 cup powdered sugar
  • 2 tsp vanilla extract
  • 1/3 cup brown sugar
  • 2 tbsp ground cinnamon

Optional Topping:

  • Honey bun crumbs
  • Drizzle of cinnamon glaze or caramel

Instructions
 

Step 1: Prepare the Crust

  • In a mixing bowl, combine graham cracker crumbs, sugar, cinnamon, and melted butter.
  • Press the mixture evenly into the bottom of a greased springform pan. Use a flat-bottomed glass to ensure a firm crust.
  • Pre-bake the crust at 350°F (175°C) for 10 minutes. Let it cool while you prepare the filling.

Step 2: Make the Filling

  • Beat softened cream cheese and sugar until smooth and creamy.
  • Add eggs one at a time, mixing well after each addition.
  • Stir in sour cream, powdered sugar, and vanilla extract until fully combined.
  • In a separate bowl, mix brown sugar and cinnamon for the swirl.

Step 3: Layer and Bake

  • Pour half of the cheesecake filling over the cooled crust.
  • Sprinkle a layer of the cinnamon-sugar mixture over the filling.
  • Add the remaining cheesecake filling and create swirls by dragging a knife through the layers.
  • Bake at 325°F (163°C) for 50-60 minutes or until the center is set but slightly jiggly.
  • Turn off the oven and let the cheesecake cool inside with the door ajar for an hour.

Step 4: Cool and Garnish

  • Refrigerate the cheesecake for at least 4 hours or overnight for the best texture.
  • Top with honey bun crumbs, a drizzle of cinnamon glaze, or a dusting of powdered sugar before serving.
