Classic Sicilian Omelette Recipe

- 2-3 eggs
- A splash of cream milk, or water
- Salt and white pepper
- Butter for frying
- Creamy goat’s cheese
- Fresh mint
Beat the eggs with your choice of liquid. Add salt and white pepper to taste.
Heat butter in a frying pan over medium heat. Reduce to low heat once melted.
Pour the egg mixture into the pan and cook until it starts to set.
Add goat’s cheese and fresh mint on top.
Cook until the omelette reaches your desired consistency — creamy or fully set.
