Creamy Quinoa Chicken Soup

Ingredients
  

  • 4 cups chicken stock
  • 1 cup cooked red quinoa
  • 2 tbsp butter
  • 1 onion diced
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 1/2 cup half-and-half
  • 2 cups shredded chicken
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • Sauté onion, carrot, and celery in butter until softened.
  • Add chicken stock and bring to a simmer.
  • Stir in cooked quinoa, chicken, and half-and-half. Simmer for 5 minutes.
  • Season with salt and pepper, garnish with parsley, and serve hot.
