  • 500 g sausage mince any type: pork, chicken, or plant-based
  • 1 tsp paprika
  • 1 tbsp minced garlic
  • Salt and pepper to taste
  • 2 raw eggs beaten
  • 1 cup breadcrumbs mixed with 1 tbsp Italian herb powder
  • Oil for deep frying

For the Deviled Eggs Filling:

  • Yolks from the boiled eggs
  • 1/4 cup mayonnaise
  • 1 tsp Dijon mustard
  • 1/2 tsp hot sauce optional
  • Paprika for garnish
  • Chopped spring onions or chives for garnish

Instructions

Step 1: Prepare the Scotch Eggs

  • Mix the sausage mince with paprika, garlic, salt, and pepper in a bowl.
  • Divide the mixture into six portions. Flatten each portion into a patty.
  • Place a boiled egg in the center of each patty and wrap the sausage around it, shaping it evenly.
  • Dip each sausage-wrapped egg into the beaten eggs, then roll in the breadcrumb mixture until evenly coated.
  • Heat oil in a deep pan and fry the coated eggs for 6-8 minutes until golden brown. Remove and drain on paper towels.

Step 2: Make the Deviled Egg Filling

  • Slice the fried Scotch eggs in half lengthwise. Carefully scoop out the yolks into a bowl.
  • Mash the yolks with mayonnaise, mustard, and hot sauce. Season with salt and pepper to taste.
  • Spoon the yolk mixture into a piping bag and fill each egg white cavity.

Step 3: Assemble and Garnish

  • Sprinkle the filled eggs with paprika and garnish with spring onions or chives. Serve warm or at room temperature.
