Featured Recipe: Pac Choi & Broccoli with Roasted Garlic and Mushrooms

Ingredients
  

  • 3 tbsp canola or peanut oil
  • 1 bulb roasted garlic
  • 1 head Pac Choi leaves and stems separated
  • ½ lb broccoli chopped
  • cups chopped onion
  • 10 shiitake mushrooms stemmed and quartered
  • ¼ tsp salt
  • 1 tsp fresh minced garlic
  • Freshly ground black pepper

Instructions
 

  • Roast garlic until golden and fragrant.
  • Heat oil in a large skillet or wok. Add onions and mushrooms, cooking for 2 minutes.
  • Stir in Pac Choi stems, broccoli, and salt. Cook for another 2 minutes.
  • Add Pac Choi leaves and 1½ tbsp water. Cover and simmer until tender.
  • Toss with fresh and roasted garlic, season with salt and pepper, and serve immediately.
