How to Cook Beef Rendang: A Classic Recipe

Here’s an authentic beef rendang recipe to try:

  • 1 kg beef (cut into chunks)
  • 1 liter thick coconut milk (from 3 coconuts)
  • 550 g grated coconut (toasted until golden brown)
  • 5 bay leaves
  • 1 turmeric leaf
  • 1 kaffir lime leaves
  • 5 stalks of lemongrass (bruised)
  • ½ stick cinnamon
  • 3 cloves
  • 2 tsp salt
  • 1 star anise

Spice Paste

  • 65 g garlic
  • 125 g shallots
  • 15 g tumeric
  • 35 g ginger
  • 75 g galangal
  • 35 g candlenuts
  • ½ tsp ground pepper
  • 1 tsp coriander
  • 1 cardamon pod
  • ¼ nutmeg

Instructions
 

  • Prepare the Spice Base
    Blend all the spice paste ingredients until smooth. Toast the grated coconut until golden brown.
  • Cook the Spices
    Heat oil in a large pan and sauté the spice paste. Add the toasted grated coconut and stir until fragrant.
  • Simmer the Beef
    Add the beef chunks and stir well to coat them with the spices.
  • Add the Coconut Milk
    Pour in the thick coconut milk and mix thoroughly. Add bay leaves, turmeric leaf, kaffir lime leaves, lemongrass, cinnamon, cloves, and star anise.
  • Cook Slowly
    Cook on low heat, stirring occasionally, until the coconut milk reduces and the oil separates. Continue cooking until the sauce thickens and the beef is tender.
  • Serve
    Enjoy your homemade beef rendang with steamed rice or as part of a larger meal.
