How To Make Bitterkoekjes

  • 300 g ground almonds
  • 600 g sugar
  • 2 egg whites
  • ½ tsp almond extract

  • Preheat the Oven: Set to 325°F (160°C). Line a baking sheet with parchment paper.
  • Mix Dry Ingredients: Combine ground almonds and sugar in a medium-sized bowl.
  • Incorporate Wet Ingredients: Add egg whites and almond extract. Stir until a thick dough forms.
  • Shape the Cookies: Roll the dough into 1-inch (2.5 cm) balls. Place them on the baking sheet, spacing 1.5 inches (3 cm) apart. Flatten slightly.
  • Chill the Dough: Refrigerate the shaped cookies for 20-30 minutes.
  • Bake: Bake for about 20 minutes until light golden brown.
  • Cool: Allow the cookies to cool completely before removing them from the parchment.
