How to Make Poulet Frites at Home

Recreating the authentic flavors of poulet frites is easier than you might think. Here’s a recipe to bring this French favorite to your table:

  • 1 whole chicken (about 3 lbs), free-range and hormone-free
  • 3 tbsp butter
  • 2 tbsp fresh marjoram, thyme, and minced garlic
  • 1 lemon, juiced
  • 1 lb potatoes, cut into fries
  • Cooking oil for frying

For the Gravy

  • 2 cups chicken stock
  • 1 tbsp flour
  • 1 tbsp butter

Instructions
 

  • Marinate the Chicken: Coat the chicken with butter, marjoram, thyme, garlic, and lemon juice. Let it marinate for 30 minutes.
  • Roast the Chicken: Preheat the oven to 375°F (190°C). Roast the chicken for 50–60 minutes until the skin is golden and crispy.
  • Fry the Potatoes: Heat oil in a deep pan and fry the potatoes until golden and crispy. Drain on a paper towel.
  • Make the Gravy: Melt butter in a saucepan, stir in flour, and cook until golden. Gradually add chicken stock and red wine, whisking until smooth and thickened.
