Making Maicillos at Home

For those who love baking, maicillos are surprisingly easy to make. Here’s a step-by-step recipe to bring this cultural treat to your kitchen.

Ingredients
  

  • 1 1/4 cups cornstarch
  • 1 1/4 cups all-purpose flour
  • 2/3 cup powdered sugar
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/8 tsp ground cloves
  • 6 tbsp butter or shortening softened
  • 4 egg yolks
  • 1 tbsp vodka optional, enhances texture
  • 1/2 tsp vanilla extract
  • 2 –4 tbsp milk if needed

Instructions
 

Preheat and Prep

  • Preheat your oven to 275°F (135°C). Line a baking sheet with parchment paper or foil.

Mix Dry Ingredients

  • In a bowl, whisk together the cornstarch, flour, powdered sugar, baking powder, and spices.

Combine with Butter

  • Add softened butter to the dry mixture. Use your hands or a pastry cutter to blend until the texture resembles fine crumbs.

Incorporate Wet Ingredients

  • Make a well in the center of the mixture. Add egg yolks, vodka, and vanilla. Gradually mix until a dough begins to form. If it’s too crumbly, add milk one tablespoon at a time.

Shape the Cookies

  • Roll the dough into 1-inch balls, then flatten them into discs. Place them on the prepared baking sheet, leaving space between each cookie.
