Ponzu Mayo Recipe: Grilled Vegetables with Ponzu Mayo

This recipe showcases how ponzu mayo complements grilled vegetables.

Ingredients
  

  • 1 medium courgette sliced
  • 1 small aubergine sliced
  • 1 red pepper cut into large pieces
  • 2 potatoes quartered
  • 1 red onion sliced thick
  • 3 tbsp olive oil
  • 3 tbsp Kikkoman Naturally Brewed Soy Sauce
  • 2 cloves garlic crushed
  • For Ponzu Mayonnaise:
  • 6 tbsp Kikkoman Ponzu Citrus Seasoned Soy Sauce - Lemon
  • 8 tbsp mayonnaise
  • 1 sprig fresh rosemary chopped
  • 3 cloves garlic crushed
  • Pepper to taste

Instructions
 

  • Prepare Vegetables: Slice the courgette, aubergine, and onion. Quarter the potatoes and cut the red pepper into large pieces.
  • Marinate: Mix olive oil, crushed garlic, and soy sauce. Toss the vegetables in this mixture and let marinate for 15 minutes.
  • Make Ponzu Mayo: Combine ponzu sauce, mayonnaise, rosemary, garlic, and pepper. Mix well and chill.
  • Grill: Preheat the grill to medium. Cook vegetables for 7-10 minutes, turning occasionally. Potatoes may require 15-20 minutes.
  • Serve: Arrange grilled vegetables on a plate and serve with ponzu mayo on the side.
