Recipe 2: Chicken Salad with Avocado and Arugula

Ingredients
  

  • 1 roasted chicken shredded
  • 1 large avocado sliced
  • 2 cups arugula
  • 2 medium tomatoes chopped
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • Salt and pepper to taste

Instructions
 

  • Toss arugula, avocado, and tomatoes in olive oil and vinegar.
  • Add shredded roast chicken. Season with salt and pepper. Serve chilled or at room temperature.
