Recipe: Pineapple and Sweet Floss Fried Rice

This flavorful fried rice dish features a balance of tangy pineapple, savory meat floss, and crunchy cashews.

Ingredients
  

  • 1 pineapple halved and cored
  • 500 g cooked rice
  • 150 g prawns shelled and deveined
  • 150 g chicken breast diced
  • ½ small onion diced
  • 2 eggs
  • 80 g roasted cashews
  • 20 g chicken meat floss
  • 1 tsp turmeric powder
  • 3 tbsp fish sauce
  • 100 g sliced pineapple
  • 3 tbsp pineapple juice
  • ¼ tsp pepper
  • 3 tbsp oil
  • 1 red chili sliced
  • Coriander for garnish

Instructions
 

  • Prepare the Pineapple: Halve the pineapple, remove the core, and slice the flesh. Reserve juice and sliced pineapple.
  • Cook the Eggs: Heat oil in a pan, scramble the eggs, and set aside.
  • Stir-Fry Ingredients: Sauté onions, chicken, and prawns. Add cooked rice and mix well.
  • Season: Add turmeric powder, fish sauce, pineapple juice, and pepper. Stir evenly.
  • Add Toppings: Mix in roasted cashews and sliced pineapple. Season with additional fish sauce if needed.
  • Serve: Dish the fried rice into the hollowed pineapple halves, sprinkle with chicken floss, and garnish with chili slices and coriander.
