Salmon With Herbs Ina Garten Recipe

Ingredients
  

  • For the Salmon
  • 1 1 to 1.5-pound salmon fillet, preferably wild and skinless
  • Kosher salt and freshly ground black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon freshly squeezed lemon juice
  • 3 scallions minced (white and green parts)
  • 2 tablespoons minced fresh dill
  • 2 tablespoons minced fresh parsley
  • 1/4 cup dry white wine optional
  • Lemon wedges for serving

  • Sliced beefsteak tomatoes
  • Sautéed Asian greens with garlic
  • Roasted delicata squash
  • Steamed green beans over kasha buckwheat

Instructions
 

  • Preheat Oven: Preheat your oven to 425°F (preferably on convection setting).Preparing the Salmon
  • Season the Salmon: Place the salmon fillet in a glass, ceramic, or stainless-steel roasting dish. Season generously with salt and pepper.
  • Add Olive Oil and Lemon Juice: Whisk together olive oil and lemon juice, then drizzle evenly over the salmon. Let the salmon sit at room temperature for 15 minutes.

Adding Herbs

  • Prepare Herb Mixture: In a small bowl, combine the minced scallions, dill, and parsley.
  • Herb Topping: Pat the herb mixture over the top of the salmon fillet for even coverage.

Roasting the Salmon

  • Roast: Roast the salmon for 8 to 10 minutes, until it’s almost cooked in the thickest part (it should be slightly translucent in the center).
  • Rest: Cover the dish tightly with aluminum foil and let it rest for 10 minutes. The residual heat will finish cooking the fish to perfection.

Serving

  • Garnish and Serve: Cut the salmon into serving portions and drizzle with additional lemon juice. Serve hot with lemon wedges and your choice of sides.
