Traditional Spanish Chicken Wings

Ingredients
  

  • 2 pounds 1 kg chicken wings (about 10 whole wings, tips removed, cut into parts)
  • 3 tablespoons olive oil
  • Salt pepper, and smoked paprika (to taste)
  • Pinch of red pepper flakes optional
  • 3-4 garlic cloves minced
  • 1 bunch fresh parsley finely chopped (leaves and tender stems)
  • ¼ cup brandy sherry, or wine (optional)
  • ½ cup chicken broth
  • 1-2 bay leaves

Instructions
 

  • Prepare the Wings: Season the wings generously with salt, pepper, and smoked paprika.
  • Pan Fry: Heat olive oil in a large skillet over high heat. Add wings in batches, browning them for 3-4 minutes per side.
  • Prepare the Sauce: Combine minced garlic, chopped parsley, bay leaves, chicken broth, and optional brandy/sherry in the skillet. Let it simmer to reduce slightly.
  • Finish Cooking:
  • Stovetop: Return wings to the skillet, cover, and cook on low heat for 10-15 minutes, stirring occasionally.
  • Oven: Transfer wings to a casserole dish, pour sauce over them, and bake uncovered at 350°F (180°C) for 20 minutes until cooked through.
  • Serve: Arrange on a platter, spoon sauce over the wings, and serve with crusty bread.
